Pondok has created many savory dishes on the menu which are both traditional and familiar to the palate. Our signature sauces are the key component to making our dishes so successful.
We have introduced an array of sauces from our menu for our customers to bring Pondok into their own kitchen.
Each consists of carefully chosen ingredients and imported spices, from the islands of Indonesia, rewardingly revealed in the final dish.
Pondok sauces contain no preservatives, additives, or food colouring in our product and our quality stands proud.

Sambal Bajak
Indonesian Fried Chili Sauce
This boisterous chili sauce, used sparingly or unsparingly, is Pondok’s most sought out condiment in the restaurant. Traditionally used in every household in Indonesia, the need to give dishes a touch of heat is becoming customary in the Western culture. Pondok’s Sambal Bajak encases its texture with rich flavours of fresh red chili peppers, shrimp paste, lemongrass and other spices of Indonesia, cultivating the palate with colourful dimensions.
Serving Suggestion:
Use as a dipping sauce for raw or cooked vegetables, chicken, beef, seafood, noodles and rice dishes.
Bumbu Bali
Indonesian Red Pepper Sauce
This Red Pepper Sauce is as vibrant and flavourful as its colour reveals. Prepared for our vegetarian and non-vegetarian dishes on the menu called “Tahu Bumbu Bali” or Tofu with Red Pepper Sauce and “Ayam Bumbu Bali” or Chicken with Red Pepper Sauce, its mild yet sweet red pepper flavour infuses these dishes invitingly.
Serving Suggestion:
Use as a base for chicken, fish and tofu dishes.
Serve with steamed jasmine rice.
Bumbu Gado-Gado
Indonesian Peanut Sauce for mixed vegetable salad
This salad dressing has long since become a favourite in the restaurant for our renown Gado-Gado salad. A combination of sweet and sharp flavours result in a smooth peanut texture of spice and richness embellishing the flavours of the vegetables into a dynamic and hearty salad.
Serving Suggestion:
Use as a salad dressing on boiled shredded cabbage, bean sprouts and spinach. Serve with hardboiled eggs, fried tofu and potatoes, fried shallots and shrimp chips.

Acar Kuning
Indonesian Turmeric Pickled Sauce
This brilliant yellow sauce is obtained from a South Asian fragrant spice called turmeric. Yellow is considered a sacred colour throughout Asia which is why turmeric is used particularly generously at festive meals. The triple combination of sour, sweet and aromatic fragrant of the spices in this sauce entices the senses to a delectable entrée. Pondok has served this succulent sauce on our fillet of red snapper as an ongoing dish and well admired dishes for feasts.
Serving Suggestion:
Use as a base for coated fish fillet. Top with pickled cucumber. Serve with steam jasmine rice.
Indonesian Hot Pot Dipping Sauce
This well desired sauce, served during the cooler seasons of Indonesia, is used for Hot Pot. Meat, seafood and vegetable are self-cooked in a prepared boiling soup stock as an Asian fondue which is traditionally served and shared in larger groups. The combination of sour, sweet and tangy flavour of this special dipping sauce enriches the dish to a higher level.
Serving Suggestion:
Use as a dipping sauce for thinly sliced meat, seafood, tofu, noodles and vegetables.
For a fiery dip, add chopped bird’s-eye red chili pepper.
